Many correspondents who
specialise in writing about food
argue that Risotto Buranello is
the world’s best risotto, but that
is difficult to confirm or deny
as taste is personal. It remains
for the curious, if they find
themselves in Venice, to take
a trip to Burano and decide for
themselves.

Thus Burano today is world
famous for crocheted lace. The
exhibition at the Museum of
Lace on the island’s central
square leads visitors through
different periods of crocheting,
from the 16

century to today,

decorative detail on clothing
and furniture.
Today, however, Burano,
which is located about 45
minutes from Venice by boat,
is perhaps best known for
Risotto Buranello. With this
dish, Italian culinary simplicity
and genius simultaneously
shine in a whole new light.
The basis for the risotto
is the broth of an ugly little
fish with bulging eyes, which
is caught only in the mud
of the Venice lagoon and is
not edible in any other way.
The rice is cooked in a broth
using a special technique,
with constant “throwing”
from the pan causing it to
become creamier. Real Risotto
Buranello can probably only
be eaten on Burano, and the
most famous place to do so
is the Trattoria da Romano, a

jestiva na drugi način. Pirinač
se kuva u bujonu posebnom
tehnikom, stalnim „bacanjem“

Pravi rižoto buranelo verovat-

Buranu, a najpoznatije mesto
za to je Tratoria da romano
(Trattoria da Romano), restoran
koji je ugostio brojne poznate
ličnosti, a svetsku slavu mu je
donela televizijska emisija „Bez
rezervacije“ (No reservations).
Mnogi specijalizovani
izveštači koji pišu o hrani tvrde
da je rižoto buranelo najbolji
rižoto na svetu, ali to je teško
potvrditi ili demantovati, jer,
o ukusima se ne raspravlja.
Najradoznalijima preostaje da
se, ako se nađu u Veneciji, za-
pute na izlet u Burano i sami se
u to uvere.
